SERVES 4 PREP TIME 15 mins COOK 10 mins
3 medium sized zucchinis, grated
500g chicken mince
1 cup (120gm) grated cheddar cheese
1 small onion, finely chopped ( I use a couple of shallots)
1 ½ cups fresh breadcrumbs (a few slices of toasted multigrain bread put through the blender makes lovely breadcrumbs)
2 tbsp rice bran oil (I used olive oil)
Salad to serve
1. Squeeze grated zucchini to remove excess liquid
Place in a large bowl with chicken mince, cheddar, onion and 1 cup of breadcrumbs. Season and mix well. Using hands, shape mixture into eight patties. Press patties into remaining breadcrumbs to coat evenly.
2. Heat oil in a large frying pan on medium low. Cook patties 4 – 5 minutes each side, until golden brown and cooked through. Serve with salad.
